Wild Garlic, Nettle, Spinach and Batata Omelette
Cheesy Halloween-Coloured Omelette
Batata- Purple Sweet Potato
Ingredients
4-5 Leaves of wild Garlic
2 Batata peeled*
Handful of boiled nettles, drained and chopped
1 spring onion
Handful of baby spinach leaves
6 eggs
Splash of Milk
Handful of Grated Cheddar
Handful of Grated Cheddar
Salt
Pepper
Oil for frying
Method
Crack your eggs into a bowl and whisk with the milk, add salt and pepper, spinach leaves, drained a chopped nettles (make sure you squeeze drain the nettles otherwise your omelette will fall apart!) and grate your peeled batata into the mixture and stir until mixture is even.
In the medium sized frying pan that you are using to cook your omelette, heat with a little oil on medium heat.
Chop your wild garlic leaves and spring onion finely and add to the pan.
As soon as they are cooked but not burnt, put your omelette mixture into the pan and stir to combine before the egg starts cooking.
Add your grated cheddar to the top and cover the pan.
Cook for about 5 minutes on a medium to low heat (keep checking it as you don't want the bottom to burn!)
Meanwhile heat your grill up to full, uncover the pan and place under the grill until the egg has set and the cheese has turned a golden brown.
Remove and turn out onto a plate.
* If you can't get your hands on batata, you can always use sweet potato or regular potatoes as a substitute.
And there you have it, a funky coloured omelette that tastes amazing and is super healthy (granted, it would probably be healthier without the cheese...)
