Using Up Surplus Foraged Food
I hate wasting food and there's been very few occassions that I pick too much to consume. But it's good to have a few ideas on hand to use up the leftovers, not only does it save money but it saves foraging time when the plants are less abundant and allows you to make quick easy meals.
These all take minimal effort and still have all the flavour.
Scrambled eggs with grade-out veg, dandelion greens and wild garlic (all I paid for was the eggs and parmesan)
Stuffed mushrooms (same mixture as scrambled eggs but eggs are baked into the mushrooms instead of fried)
Making homemade crostini are a good way to be ready to snack on cooked foraged veg or leftover salad, also uses up stale bread and can even later be used for breadcrumbs
Other ideas:
Omelettes
Risotto
Arancini (can be frozen)
Stuffed pasta (cannelloni or giant shells) mixed with ricotta
Raw leftovers can be made into green salad dressings, preserved in lemon juice and olive oil
You can freeze leftover cooked greens and use them for ravioli fillings etc.
