Sorrel, Lime and Dandelion Green Fizz
1/2 cup caster sugar
3/4 cup water
4-5 Dandelion leaves, thinly sliced
4-5 Common Sorrel/Wood Sorrel leaves, thinly sliced
4 limes
1 cup sparkling water or soda water
- Put sugar and water into a pan and heat until thickened.
- Remove pan from heat and cool completely.
- Finely slice dandelion and sorrel leaves and put into a blender with sugar syrup.
- Pass the mixture through a sieve to remove any solids.
- Roll limes on a hard surface to release juice, then cut in half and squeeze into the mixture.
- Stir and bottle.
For a long drink pour some of the mixture over ice and add fizzy water/soda water, a wedge of lime, a lemongrass stalk and a wood sorrel leaf to garnish.

I'm a huge fan of using medicinal herbs for less serious ailments. For example, i've cured a fungal infection on my leg (from wearing knee high boots and thick socks in a kitchen might I add, I know, my own stupid fault!) with garlic after the cream I was prescribed didn't do a damn thing. So it's not all myths and legends, it does genuinely work.
