Wild Garlic Herb Oil

A great way to preserve excess wild garlic/out of season wild garlic leaves

You Will Need:
Lemon Juice from 6 lemons
Tablespoon dijon mustard
Olive oil (enough to fill jar) 
Salt 
1 Teaspoon honey
As many wild garlic leaves as will fit into your blender

  1. Chop your wild garlic leaves finely, add lemon juice, salt, mustard, honey and blend until mixture is as fine or coarse as you like. 
  2. Transfer mixture into jars and top them up with olive oil, stirring to blend mixture. 
  3. Refrigerate. 


You can play around with flavours here, add herbs or spices as you like (basically anything that would work in a salad dressing)
Once made, you can use it to flavour new potatoes, salads, rice dishes, soups, dipping sauce for bread, topping for fish, meat or vegetables.
