Wild Garlic Herb Oil
A great way to preserve excess wild garlic/out of season wild garlic leaves
You Will Need:
Lemon Juice from 6 lemons
Tablespoon dijon mustard
Olive oil (enough to fill jar)
Salt
1 Teaspoon honey
As many wild garlic leaves as will fit into your blender
- Chop your wild garlic leaves finely, add lemon juice, salt, mustard, honey and blend until mixture is as fine or coarse as you like.
- Transfer mixture into jars and top them up with olive oil, stirring to blend mixture.
- Refrigerate.
You can play around with flavours here, add herbs or spices as you like (basically anything that would work in a salad dressing)
Once made, you can use it to flavour new potatoes, salads, rice dishes, soups, dipping sauce for bread, topping for fish, meat or vegetables.
