Turkish Delight Iced Tea
2 large handfuls of dried or fresh rose hip petals
4 tablespoons sugar
2 litres water
1 lemon cut up into slices plus another 2 lemons worth of juice to add to mixture once cooled
1 tablespoon rosewater
2 black tea teabags or loose equivalent
- Put the rose petals, sugar and lemon slices into a large, heatproof bowl.
- Meanwhile put the water on to boil (a kettle is easiest but you can use a pan if you can't fit the liquid in/don't have one).
- Pour the boiling water over your rose petal, sugar and lemon mix, stir and leave to infuse and cool, this could take a few hours.
- Once cooled, use a filtered funnel, or a fine mesh sieve sat in a funnel and strain off the rose petals and lemon slices, preferably into a screw top glass bottle.
- Add your rosewater and lemon juice and mix- easiest to put the lid on before shaking it!
- Put the bottle in the fridge, it will last for about 7 days unopened.
The fun part! Try different spirits to mix with this, you can garnish with lemongrass, mint, fresh lemon slices, fresh thyme, wild strawberries, or more rose/other wild flower petals.
I think it will go quite well with gin as a long summer drink, but i'm sure that any other white spirit would work just as well.
