Pineapple Weed and Elderflower Cookies
Nothing like home made, comforting cookies with a hint of calming wild chamomile, floral elderflower and a zing of pineapple and citrus.
These are a must try if you've discovered the joys of pineapple weed and an excellent way to use up surplus elderflowers too (I don't know about you guys but I certainly had a glut of it this year!)
I enjoyed these cookies with a soy milk chai tea infused with rose petals, perfect cookie dipping cuppa!
Ingredients:
2 eggs (beaten)
1/2 cup pineapple weed (finely chopped)
2 tablespoons elderflowers (taken off stems)
1 cup granulated sugar
1/2 cup butter
1 3/4 cup plain flour
Zest of 1 lemon (grated)
Method:
- Preheat oven to 180 degrees C (175 for fan ovens)
- Melt butter in a pan or the microwave with your chopped up pineapple weed.
- Cream together the sugar and butter.
- Stir in flour, elderflowers, eggs and lemon zest until mixture is smooth.
- Cover a baking tray with baking parchment and spoon mixture on a teaspoon at a time (make sure they are well spaced out).
- Cook for 10-15 minutes or until golden brown.
